- 1 butternut squash (peeled and chopped into 1" cubes)
- 1 yellow onion (diced)
- 1 shallot (diced)
- 2 cups water
- 2 tablespoons olive oil
- salt and pepper (to taste)
- gluten free pasta (prepared)

- In a large pot, heat olive oil on medium-high heat.
- Saute the onions and shallots until translucent and fragrant.
- Add the butternut squash and water to the pot. Cover and bring to a boil.
- Reduce heat to low and simmer for about 20 minutes until the butternut is fork tender.
- Use a hand blender to blend butternut squash into a smooth and thick sauce. Add a little water if you prefer a thinner consistency.
- Toss gluten-free pasta in the sauce and serve while hot.
Freeze sauce in an airtight container. Defrost and warm up in a saucepan when ready to consume.
