- 8 gluten-free crackers (or cookies)
- 8 large marshmallows (or 4 giant marshmallows cut in half)
- dairy-free chocolate chips (I used Enjoy Life brand)

- Line a baking sheet with aluminum foil. Turn on your oven and set to broil at low. It's important that the full oven is hot so that the chocolates melt while the marshmallow is toasting.
- Lay out gluten-free crackers* or cookies on prepared baking sheet ensuring that there is at least half an inch space between the crackers.
- Put chocolate chips on top of crackers.
- Place one marshmallow on top of the chocolate chips. If the marshmallows are large, use scissors to cut them in half.
- Put the baking sheet with prepared s'mores in the hot oven and broil for approximately 2-5 minutes until the marshmallows are toasted (time depends on the strength of your broiler)
* Graham crackers are traditionally used in S'mores, but I've tried this recipe with plain salted crackers and allergy-friendly shortbread cookies from Enjoy Life, and this recipe has come out delicous everytime.
