Ingredients
- 1 cup dried chickpeas rinsed
- 1⁄2 cup parsley chopped
- 1⁄2 cup cilantro chopped
- 1⁄2 red onion chopped
- 3 garlic minced
- 1⁄2 teaspoon cumin
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt

Instructions
- In a large bowl cover the chickpeas with water and soak for one hour.
- Preheat the oven to 375 F.
- Once the chickpeas are soaked, place all of the ingredients in a food processor. Pulse until the mixture comes out smooth enough to spoon out.
- With your hands form patties and place them on a baking sheet sprayed with oil. You should have about 8-10 patties.
- Bake for 15 minutes and flip for another 10-12 minutes.
- Remove and let cool for 5 minutes. Serve over a greens salad or as a side dish.
