Ingredients

dried chickpeas
rinsed
1⁄2
cup
parsley
chopped
1⁄2
cup
cilantro
chopped
1⁄2
red onion
chopped
3
garlic
minced
1⁄2
teaspoon
cumin
2
tablespoons
olive oil
1⁄2
teaspoon
salt
pinches of pepper
Instructions
In a large bowl cover the chickpeas with water and soak for one hour.
Preheat the oven to 375 F.
Once the chickpeas are soaked, place all of the ingredients in a food processor. Pulse until the mixture comes out smooth enough to spoon out.
With your hands form patties and place them on a baking sheet sprayed with oil. You should have about 8-10 patties.
Bake for 15 minutes and flip for another 10-12 minutes.
Remove and let cool for 5 minutes. Serve over a greens salad or as a side dish.
