Place a layer of chopped onions on the bottom of the slow cooker.
Place pork roast in slow cooker on top of onions and season with salt and pepper. I like to poke my roast all over with a fork so that it absorbs all of the flavours.
Combine the cranberry sauce and tamari (soy sauce) and pour over roast. Add the bay leaves.
Cook on high for 4-5 hours or low for 6-8 hours.
Remove roast, slice and serve with rice or potatoes.

If you wish to make a gravy, you can add a little water and cornstarch to the juices left in your slow cooker.
