Instructions
- Cut pumpkin in half. Scrape the seeds from your pumpkin with a wide, flat spoon.
- Clean the pumpkin seeds. Pull away the strings of flesh and rinse under cold running water to remove stickiness. Dry well on paper towels.
- In small bowl, combine seeds, oil and salt. Stir and coat well. Add more oil if necessary.
- Spread seeds in a single layer on 2 baking sheets lined with parchment paper.
- Bake in 350°F oven, stirring and spreading seeds on sheets once, for 15 to 20 minutes or until seeds are deep golden brown. Let cool completely before consuming.
- Store in airtight container.
Recipe Notes
Get creative and flavour pumpkin seeds with different spices. Use chili powder, fennel seeds, cumin, paprika or basil.
