Roasted Pumpkin Seeds
Pumpkin seeds are an excellent snack alternative to peanuts and other nuts, and so easy to make!

  1. Cut pumpkin in half. Scrape the seeds from your pumpkin with a wide, flat spoon.
  2. Clean the pumpkin seeds. Pull away the strings of flesh and rinse under cold running water to remove stickiness. Dry well on paper towels.
  3. In small bowl, combine seeds, oil and salt. Stir and coat well. Add more oil if necessary.
  4. Spread seeds in a single layer on 2 baking sheets lined with parchment paper.
  5. Bake in 350°F oven, stirring and spreading seeds on sheets once, for 15 to 20 minutes or until seeds are deep golden brown. Let cool completely before consuming.
  6. Store in airtight container.
Recipe Notes

Get creative and flavour pumpkin seeds with different spices. Use chili powder, fennel seeds, cumin, paprika or basil.
